Pistachio Kunafa Chocolate Bar

  • 4 ounces (about 115 gramskataifi or kunafa pastry, shredded
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1/4 cup attar (sugar syrup, see notes below), or honey
  • 1/2 cup shelled pistachios, roughly chopped
  • 8 ounces (about 225 grams) milk chocolate or dark chocolate, finely chopped

Instructions

Step 1: Prepare the Kunafa Pastry

  1. Preheat oven: First, you’ll want to preheat your oven to 350°F (175°C). Line the baking pan with parchment paper. This makes sure the kunafa doesn’t stick to the pan.
  2. Shred the Pastry: If your kataifi or kunafa pastry is in long strands, give it a rough shred. It should be in small pieces, not too finely chopped.
  3. Combine Ingredients: Place the shredded pastry in a medium mixing bowl. Pour the melted butter and granulated sugar over the pastry, and toss everything together until the pastry is evenly coated with the butter and sugar. This will make it extra crispy later, you know.

Step 2: Bake the Kunafa

  1. Spread in Pan: Press the buttered and sugared pastry into the prepared baking pan. Make sure it’s spread out evenly.
  2. Bake: Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and crispy. Keep an eye on it; you don’t want it to burn!
  3. Cool: Remove the pan from the oven, and let the baked kunafa cool completely. It’ll get even crispier as it cools, which is exactly what we want!

Step 3: Prepare the Pistachios and Chocolate

  1. Chop Pistachios: While the kunafa is cooling, chop your pistachios roughly. You can use a food processor but be sure they don’t become too fine. The roughly chopped texture is ideal.
  2. Melt Chocolate: In a small saucepan over low heat or using a microwave, gently melt your chocolate, stirring every 30 seconds to make sure it melts evenly. Be patient, and don’t overheat the chocolate.

Step 4: Assemble the Pistachio Kunafa Chocolate Bars

  1. Mix: In the same bowl where the kunafa was in, you should add the cooked kunafa, attar or honey, and chopped pistachios, make sure they are combined evenly.
  2. Layer the chocolate: Pour a thin layer of the melted chocolate into your lined baking pan and spread it evenly.
  3. Layer kunafa mix: Then, spread the kunafa mixture evenly over the chocolate, pressing down gently so it sticks together.
  4. Top with chocolate: Finally, pour the remaining melted chocolate over the top of the kunafa layer, making sure it coats everything nicely.

Step 5: Chill and Cut

  1. Chill: Place the assembled bars in the refrigerator for at least 2 hours, or until the chocolate is completely set. It needs to be firm so it doesn’t fall apart.
  2. Cut: Remove from the fridge, lift from the baking pan using the parchment paper, and use a sharp knife to cut the mixture into bars.

Step 6: Serve and Enjoy

  1. Serve: Your homemade pistachio kunafa chocolate bars are now ready to enjoy! Keep them stored in an airtight container in the refrigerator.
  2. Enjoy: Share them with friends or keep them all to yourself, I won’t judge!
